Like yourself I can't give up cheese, I like my cheese too much and have yet to find a vegan "cheese" that works for me but I do avoid none-vegetarian friendly cheeses like Parmesan. As there is only 1 tsp of parmesan, does it make much difference to the dish if it's left out?
I've been able to find vegetarian friendly Parmesan at Whole Foods, maybe check a health food store. I've made Mac and Cheese before without it and the recipe doesn't suffer from leaving out the Parmesan cheese. You can also try combining two different cheeses like sharp and swiss instead of the gouda!
